This is my favourite sandwich and my family loves it, too. It brings memories of my younger years in Chile, although this is something that any one can prepare at home, it was always a treat for me to go for afternoon tea at a very nice cafe’ in the city centre where they had a great variety of savoury food , fruity ice cream and gateaux. I would often had this with a cup of black tea with sugar.
My preference is to use white sliced bread (crust removed) as it gives it a more “delicate” touch, but you can use any kind of bread you like.
Here are the ingredients:
1 Chicken breast
1 Red pepper
4 or 5 cloves of garlic , already peeled.
2 or 3 spoonfuls of mayonnaise
Wash the red pepper, cut in half and remove the stalk, the seeds and the white membrane inside. Also, peel the garlic and onion, cut onion in half.
Put the chicken breast, pepper, onion and garlic into a cooking pan , cover with cold water and cook (simmer) until chicken is completely cooked and soft. When ready, let it cool down.
Put the chicken and red pepper on a plate, but save the stock with garlic and onion to make a soup.
If the breast has any bones, make sure you remove them all , shred the chicken with a fork and chop the pepper very small with a knife
Put in a bowl and add the mayonnaise, I first put 2 spoonfuls and only add 1 more if it the mixture is too dry. If it is still dry, just add some of the stock (you want to taste the chicken and pepper, NOT the mayo).
The mixture must be easy spreadable with shreds of chicken, not a paste.
All you have to do now is prepare your sandwich with your favourite bread and enjoy…do not forget to share, though 🙂
